Baked Vanilla Pudding with Berries

Vegan gluten-free oven-baked vanilla pudding with berries

To combine berries with vanilla flavoured things is such an easy way to create delicious treats! I hadn’t tried a warm version of it yet and decided to try in a different way than usual – with an oven.

And yes, this works very well! The smell of the hot berries is so mouth-watering! And it doesn’t matter if you eat while still warm or cold – this combination is awesome!

Vegan Baked Vanilla Pudding Berries

For 2 portions you’ll need:

1/2 cup (70g) cashews (soaked in filtered water for at least 6 hours and then drained)
1/4 cup (35g) dates
1 cup of nut-milk (best freshly home-made)
2 teaspoon vanilla paste
1 heaped tablespoon (10g) corn starch
1 pinch salt

2 handful of berries


It’s best to soak the dates a bit in the nut-milk before blending.

Preheat the oven to 180°C.

Then add all the other ingredients (except the berries) and blend to a fine cream.

Fill into oven-proof small bowls.

Carefully place the berries on top. I have used frozen berries so I’m not sure if fresh berries would require different cooking times or even some protection from burning. I will report on that once the new berries are ready for picking :)

Place the bowls on a tray into the oven and bake at 180°C for approx. 20 minutes.
