This is one of my recent flavour discoveries: berries and beetroot. Works well in smoothies but also in deserts
For this dish you only need 6 ingredients and it is incredibly easy to make.
The bright color contrast will make it hard to resist!
For 2 parfaits you’ll need:
2 cups berries (raspberries work particularly well)
20-25g raw beetroot
1 cup cashews (soaked in filtered water for at least 4 hours, then drained)
1/2 cup water
1/4 cup (35g) dates
1 teaspoon vanilla paste
Blend the berries and beetroot to a fine cream.
Also blend the cashews, water, dates and vanilla paste to a fine cream.
Then scoop them layer by layer into the desert glasses. I like to decorate the top with some extra cashew or dessicated coconut.
It’s best eaten soon after preparation, to avoid the layers of fruit and vanilla cream blending into each other. This is only a visual issue, taste-wise it will be just as good 😉
