Vanilla Raspberry Ice-Pops (Vegan)

Vegan Gluten-free Raspberry Vanilla Ice-Pops Popsicles

My latest addition to the household: popsicle forms! Yay! These things are amazing to make an sheer endless array of healthy ice-pops. There are soooo many possibilities!

I have started with a vanilla raspberry flavour – it was an instant success! About 7 ingredients is all you need – sweet! 😉

Vegan Vanilla Raspberry Ice-Pops

For 10 popsicles you’ll need:

1 can coconut cream or milk
1/3 cup water
3/4 cup (105g) dates, pitted and diced
1 teaspoon vanilla paste
1 teaspoon vanilla essence (or simply 2 teaspoon of either essence or paste..)
1/3 teaspoon salt

1 cup (140g) raspberries (fresh or frozen)

Preparation:

Blend all ingredients but the raspberries in a high-speed blender until smooth. In case your blender is not so strong, let the dates soak in the coconut cream or milk until they are quite soft.

Chuck some of the raspberries into the popsicle form. I like to squeeze them a little so that some juice comes out. It looks great when it blends with the vanilla cream.

Then fill the forms by a third. Then chuck in some more raspberries. Try to put them onto the sides otherwise the popsicle stick will push them to the bottom.

Repeat these steps until the forms are filled to the top.

Put the cover on and add the popsicle sticks and freeze until solid.

The ice-pops are easier to remove from the form when you pour some hot water over the forms.
