Vegan Gluten-free Nut-Free Soy-Free No-Bake Chocolate Cake

This is amazing! After I successfully created a mousse au chocolat that was vegan, gluten-free, nut-free and soy-free, I just had to go a step further and make a no-bake cake with the same features.

It wasn’t as hard as I thought and the result was mouthwatering delicious! But I have to warn you, this dish is super rich. Better serve small portions and enjoy responsibly ­čśë

As usual, best results are achieved with a high-speed blender.

No-Bake Chocolate Cake Nut-Free Soy-free

For a 7inch / 18cm cake tin you’ll need:

For the crust:
1 cup (190g) buckwheat groats (preferably soaked for at least 4 hours in filtered water, then drained)
3/4 cup (105g) dates, pitted & diced
1/2 cup (50g) FAIR-TRADE cocoa or cacao
1 pinch salt

For the filling:
1 can (400g) coconut cream
3/4 cup (100g) sunflower seeds (soaked in filtered water for at least 6 hours and then drained)
1 cup (140g) dates, pitted & diced
1/2 cup (50g) FAIR-TRADE cocoa or cacao
1 pinch salt

For garnish I used dessicated coconut and cacao nibs

Preparation:

Pulse the buckwheat until there are hardly any whole groats left. Transfer to a medium sized bowl.

Pulse the dates to fine grumbles and add to the bowl.

Sift the cocoa or cacao through a sieve into the bowl. Add salt and mix well.

Line the cake tine with baking paper.

Pour the dough into the tin and press it evenly with your clean hands. I like to pull it up the sides as well.

For the filling, blend all ingredients to a fine cream. If your blender isn’t very strong, let the dates soak in the coconut cream before blending.

Pour the filling into the cake tin and spread it evenly.

Add garnish of your choice.

Place in the fridge until set. Can be stored in the freezer if needed.

    Hallo, der Kuchen sieht wirklich toll aus. Was verwendest Du f├╝r eine Kokosnusscreme? Du meinst damit nicht Kokosmus oder?

      Hallo! Ich meine die Kokosnusscreme, die es in der Dose zu kaufen gibt. Gibt es das ├╝berhaupt in Deutschland? Vielleicht sollte ich es besser mit Kokosmilch ├╝bersetzen? Jedenfalls ist wichtig, dass sie einen hohen Fettgehalt hat. Ich w├╝nsche gutes Gelingen! :)

    Muss der Buchweizen dann nicht gekocht werden? Und es ist auch kein Buchweizenmehl gemeint, sondern “richtiger” (noch nicht zermahlener) Buchweizen oder?

      Sorry f├╝r die soooooo sp├Ąte Antwort! Ich bin mit dem Blog umgezogen (du findest mich jetzt auf theveganmonster.com) und habe hier lange nicht mehr reingeschaut. Durch das einweichen wird der Buchweizen recht genie├čbar, da er in die Keimphase geht. Hat soweit gut funktioniert :)
