Goji Berry Granola Slices (Vegan, Gluten-free)

Sometimes I get a little bored with plain nuts and seeds. So I’ve decided to try them in a different shape, mixed with dates.

Dates contain quite a bit of sugar, so I make very thin slices, which can serve as a treat.

Goji Berry Granola Slices

For a dozen slices you’ll need:

1/2 cup (70g) brazil nuts
3 tablespoon goji berries
2 tablespoon sunflower seeds
1 tablespoon chia seeds
2 tablespoon sesame seeds
1 cup (120g) dates

Preparation:

Chop the brazil nuts roughly into small chunks and transfer to a medium size bowl.

Chop the goji berries roughly and add to the bowl.

Add the sunflower seeds, chia seeds and sesame seeds.

Grind the dates in a food processor or blender and add to the bowl as well.

Use a fork to mix the dates with the other ingredients.

Transfer to a small baking tray and use your clean hands to press the (quite sticky) mass evenly flat.

Place in freezer for at least an hour. You can then cut it into snack size pieces.

Keep refrigerated between servings, as they are best eaten chilled.
