No Bake Chocolate Vanilla Cake (vegan, Gluten-free)

No, there is no end in sight yet. I have a few more ideas for my no bake cake series :)

This time I’ve tried a combination of chocolate and vanilla – because I love them both! And I’ve added some sunflower seeds. They add a very nice nutty flavour. Gluten-free, vegan and without added sugar. Yum! :)

Gluten-free Vegan No Bake Chocolate Vanilla Cake

For 4 mini tarts you’ll need:

For the crust:
1 1/4 cup (175g) almonds
1/2 cup (70g) dates
2 heaped tablespoon (20g) cocoa powder

For the chocolate filling:
3/4 cup (100g) cashew nuts (soaked in filtered water for at least 6 hours)
1/2 cup (70g) sunflower seeds (soaked in filtered water for at least 6 hours)
1/2 cup (70g) dates
1/2 cup (100g) coconut oil
1/2 cup water
5 tablespoon (40g) cocoa powder

For the vanilla cream:
1/2 cup (70g) cashew nuts (soaked in filtered water for at least 6 hours)
1/4 cup water
5 tablespoon coconut oil
1 heaped teaspoon vanilla paste

Preparation:

For the crust, grind the almonds to fine crumbles and transfer to a medium sized bowl.

Roughly chop and blend the dates until they become a gooey clump and add to the bowl. Also add the cocoa powder.

Pour in the coconut oil and knead it well to combine.

Place in the tart tins and press it firmly with your hands, make a little border on the sides too.

Place in freezer while you prepare the filling.

For the chocolate filling, blend all ingredients to a fine cream, adding the cocoa powder at the end.

Take the tart tins out of the freezer, pour in the filling and spread it evenly. Put some of the chocolate filling aside.

For the vanilla cream, blend all ingredients to a smooth paste.

Place a few scoops of vanilla cream onto each tart tin.

Add the rest of the chocolate filling on top.

Place in the freezer until set (approximately 2-3 hours). The cake can then be stored in the fridge.

Let thaw for a few minutes before serving.
