Roasted Figs with Vanilla Ice-Cream (Vegan, Gluten-free)

New season, new crop. I do miss summer already, but I love how each season has it’s own very special harvest. For example figs. Yummy and such healthy little things. I’ve had a few dishes containing figs in the last week.

This dish has turned out to be one of my new favourite easy deserts. Roasting the figs strengthens their flavour and makes a great match for ice cream. With some chopped walnuts on top it is a much welcomed delicious change from the usual :)

Vegan Gluten-free Roasted Fig with Vanilla Ice Cream

For two portions you’ll need:

5 figs
2-4 scoops of vegan vanilla ice cream
2-4 tablespoon chopped walnuts

Preparation:

Preheat the oven to 190°C.

Gently wash the figs, remove the hard bit of the stalk and cut them in half.

Line a baking tray with baking paper and place the figs onto it.

Vegan Gluten-free Roasted Fig with Vanilla Ice Cream

Roast in the oven for approx. 15-20 minutes until the tops start to turn golden-brown.

Serve hot with ice-cream and the walnuts sprinkled over.
