Roasted Figs with Smokey Tempeh and Salad

Roasted Figs with Smokey Tempeh and Salad

Another yummy fig recipe! I thought they could be a great starter or light meal as well. Combined with my beloved lettuce and protein-laden tempeh it just had to work. And yes! An awesome combination of smokey tempeh, sweet fig and balsamic dressing. Yum! :)

For 2 portions you’ll need:

10 figs
2 portions fresh lettuce

100g tempeh
3 tablespoon soy sauce
25 drops liquid smoke
some cooking oil (I prefer coconut-oil)

3 tablespoon balsamic vinegar
5 tablespoon olive oil
1-2 garlic cloves
some freshly ground black pepper

Preparation:

Preheat the oven to 190°C.

Gently wash the figs and cut them in half.

Line a baking try with baking paper and place figs onto it.

While the figs are in the oven, cut the tempeh into thin slices.

Mix the soy sauce and liquid smoke in a flat dish (lasagne dish works quite well).

Place the tempeh strips in that dish and let soak a little before turning.

In the meantime peel the garlic and mince it into a small bowl. Add the balsamic, olive oil and pepper. Mix well until creamy.

Heat some cooking oil in a pan and fry the tempeh strips for approx. 1 minute on each side until golden-brown.
